Banana & Chocolate Squares

by James

This has been one of Luise's favourite snacks during pregnancy so we thought it would be a great first recipe to share with you all!

They're super easy to make with just 5 ingredients you might already have in the cupboards.

Also they're completely free-from gluten, dairy and eggs.

They have a delicious sweetness to them, tapping into those pregnancy cravings but also are nutritious and perfect breakfast or snack on the go.

And of course they contain a little chocolate, because Luise couldn't get enough of the stuff during her pregnancy!

Makes 16

▪️6 ripe bananas (600g)

▪️6 cups oats (480g) we use gluten free

▪️75g coconut oil (melted)

▪️150g fruit, nut and seed mix

▪️85g chocolate - we use vegan

1️⃣ Mash the bananas in a large mixing bowl, then add the oats + melted coconut oil + fruit, nut and seed mix + chopped chocolate and mix to combine

2️⃣ Pour the mixture into a lined squared baking tray and press to compact the mixture

3️⃣ Bake in the oven at 180C for 30-35 minutes or until the top is slightly golden

4️⃣ Remove from the baking tray and leave to cool before cutting (approx 20 mins)

➡️ Can I freeze these? Yes, these can be stored in a bag or container in the freezer for up to a month

➡️ How long do these stay fresh? 2-3 days at room temperature or 3-4 days in the fridge

➡️ What if I am not gluten or dairy free? You can use standard rolled oats and chocolate of choice

➡️ What if I have a nut allergy? You can bake this without the nut/seed mix
